Food and wine matching principle used to be as simple as "white wine with poultry and fish, red wine with red meats and cheese" and "start with sherry, end with the port" . However, it is now more complicated although the above principle is still generally applied. With more and more exotic and crossed-cultured dishes, the exceptions to the above food and wine matching principles are also increased. In addition, it is also observed now that there are much more cheese being happier with the white than the red which again violate the original food and wine matching principles.    

What if  food and wine doesn't match?  

What will be the worst that can happen when we have a wrong food and wine match? So what! The worst that may turn out would probably be a strong flavored food stripping off the complexity of a wine which make taste just ordinary. The direct impact is only probably on the amount which we spend on the wine... "Pay more get less"... don't worry we could generally afford that.

When we got the right food and wine match, we could probably adds a little more enjoyment to both the wine and the food... The wine taste better and the food taste better than usual as well.
